Job title: 2nd Cook

Job description: This position is responsible for the setup, maintenance and service of the Kitchen “line” in conjunction with the first cook. This is primarily a line position in either of the Clubs two kitchens. The position is also responsible for buffet work including set up, take down and storage, and for family night buffet as well as for staff meal and any other special events from time to time. This position also maintains the Clubs kitchens in a clean and orderly manner, taking part in daily cleaning during and at the end of the shift. Must be available to work evenings and weekends.

RESPONSIBILTIES:

  • Prepares, cooks and plates hot and cold appetizers, and prep work
  • Ability to train prep cooks and new second cooks
  • Operates and cleans deep fryers
  • Operates and maintains soup warmers to food safe standards
  • Ability to perfectly deep-fry products
  • Has keen eye for detail and can perfectly plate all appetizers
  • Prepares sandwiches and ensures that bread is always fresh
  • Assists with banquets, including carving on a station and making omelets al a minute
  • Able to judge food quality by appearance, and texture
  • Understands portioning and rotation of product using only portion controlled products
  • Consistently meets bill time expectations which are provided
  • Always uses syllabus and recipes and ensures stations are set-up correctly

QUALIFICATIONS:

  • Completion of and/or final year of Secondary School
  • 2 years basic restaurant experience
