As Executive Sous Chef of Restaurants at Rimrock Resort Hotel, you will lead a high-performing team of culinary professionals who are committed to creating dining experiences for our guests that are as memorable as the views from all three of our restaurants: fine dining Eden, casually elegant Primrose, and tastefully inviting Larkspur.
What do you need to be successful in this role?
· Journeyperson Chef certification or international equivalent
· Inter-provincial Chef’s Red Seal is an asset
· 8 years of progressive international kitchen experience
· 4 years of experience as a Sous Chef / Executive Sous Chef in a busy luxury hotel kitchen
· Knowledgeable in a variety of culinary styles and food preparation techniques
· Keen attention to detail and high standards for food production
· Excellent communication and interpersonal skills
· Able to work effectively as part of a multi-cultural work environment
· Competent computer skills and comfortable using MS Office and food-ordering and inventory-management software
· Demonstrates an aptitude for the operational side of the restaurant business
· Remains calm while under pressure and actively contributes to a positive and motivating work environment
· Continually studying, researching, and experimenting to upgrade culinary knowledge and skills
What do we expect from you?
Day-to-day:
· Establish the day’s priorities and assign tasks to Sous Chefs and Chefs de Partie to execute.
· Ensure all staff prepare menu items following recipes and yield guidelines, according to restaurant standards.
· Ensure each kitchen station is stocked with appropriate tools, supplies, and equipment required to meet business demand.
· Review daily supply requisitions and ensure supplies are received and stored correctly.
· Provide ongoing training, coaching, and mentoring to kitchen staff on food preparation and storage, hygiene and sanitation, and service standards, re-training and/or administering disciplinary action as necessary.
· Prepare weekly work schedules for kitchen restaurant teams in accordance with staffing guidelines and forecasted labour costs, adjusting as necessary to meet business demands.
· Work online during service as required to meet business needs and service standards.
· Maintain a safe and sanitary working environment, adhering to food safety and health regulations.
Long-term:
· Collaborate with the executive team to develop and execute long-term culinary strategies aligned with the restaurants’ identities.
· Drive staff development initiatives, including training programs, performance evaluations, and career advancement opportunities.
· Actively participate in sourcing high-quality ingredients from local suppliers and maintaining strong vendor relationships.
· Monitor financial performance, including food costs and labor expenses, and take corrective actions when necessary.
· Prepare and conduct employee performance reviews.
