Description:

Food Services at the University of Toronto oversees more than 30 food locations across the St. George campus and runs programs, cultural events, environmental initiatives and campus Meal Plans. Under general direction of the Executive Sous Chef, the Head Cook directs and works with a crew of Cooks and Cafeteria Workers in the preparation of meals for a large cafeteria operation.

Typical Duties

  • Directs a crew of Cooks and Cafeteria Workers in preparation of meals according to established menus and recipes;
  • Cooks food in accordance with established recipes and menus;
  • Prepares vegetables, meats and pastries for cooking;
  • Sets out food in appropriate containers to be served, and garnishes;
  • Assists in menu planning;
  • Ensures cooking areas are cleaned;
  • Assists with periodic inventory review and reporting;
  • Receives and stores food/kitchen supplies; checks receiving slips;
  • Stands in, as directed, for the Executive Chef, particularly during evening or weekend hours; leads, directs, trains and works with all Food Service staff; and
  • Other related duties as required.

Minimum Qualifications

Education:

  • Completion of Grade 12 or equivalent, preferably a graduate of a recognized culinary program.

Experience:

  • Five (5) years of cooking experience in a large operation, education may be substituted for experience.

Other:

  • Physical ability to perform required duties, ability to communicate effectively in English (oral and written), tact in dealing with people and ability to direct. Successful completion of food safety training.
