Job description: Pure Spirits Oyster House & Grill, part of The Distillery Restaurants Corp., creators of El Catrin, Madrina Bar y Tapas, Cluny Bistro & Boulangerie, Archeo Trattoria, and Distillery Events, is growing and looking for an experienced oyster shucker to grow with us!

Our venues are located in the Distillery Historic District, one of Canada’s most exciting art and shopping destinations in and home to some of the top-ranked restaurants in the City of Toronto.

We are actively seeking a reliable and motivated OYSTER SHUCKER who loves food (and oysters!), takes pride in their growing craft and wants to contribute to a high-achieving, team-oriented kitchen! What you’ll be doing:

  • Following recipes, portion controls and presentation specifications as set out by our Executive Chef
  • Preparing daily items according to instructions
  • Maintaining a clean and organized shucking station
  • Assisting in cleaning food prep areas, equipment, and utensils, while strictly adhering to sanitation, food safety, and hygiene guidelines
  • Following FIFO (first in, first out) method to maximize freshness
  • Moving food products and supplies between outlets when necessary
  • Reporting any equipment/utensil malfunctions/deficiencies to Chef on duty
  • Working collaboratively with BOH team members
  • Following and enforcing hygiene and safety standards set by the Public Health Department and the Company
  • Interacting and engaging with guests sat at the oyster bar while shucking
  • Setting up and shutting down the oyster bed and station
  • Identify, open and clean oysters with efficiency and confidence
  • Other duties or responsibilities as assigned or required

What you’ll bring to the kitchen:

  • Oyster product knowledge and ability to identify types and origins is considered a HUGE asset
  • Excellent communication skills and customer service experience is considered an asset
  • Minimum one (1) year shucking experience in a fast-paced restaurant environment, the experience is an asset – but we are willing to train the right candidate with culinary experience. We are looking for someone who has the drive to push through service, loves to learn and wants to have FUN
  • Culinary degree/diploma and/or the equivalent in education and experience is an asset
  • Ability to work independently with good judgement and problem-solving abilities
  • A strong eye for detail
