Aramark is recruiting an Executive Chef to manage four (4) culinary operations at our client sites in Toronto, London, Winnipeg, and Regina. This position is responsible for oversite and management of each operation through collaboration with site chefs during monthly scheduled visits to each city. This position will be based out of the downtown Toronto Aramark operation and is a Monday – Friday DAY Shift operation.

The Executive Chef is responsible for developing and executing culinary solutions to meet client needs and tastes for food service and catering operations at each location. Oversees and manages culinary operations to meet production, presentation, and service standards. Applies culinary techniques to food preparation and manages the final presentation and service of food.

Job Responsibilities

  • Manages four (4) client site culinary operations in Toronto, London, Winnipeg and Regina
  • Monthly travel to London, Winnipeg and Regina is required to maintain quality and standards
  • Responsible for menu planning, managing catering menu and day-to-day food station offerings
  • Runs day-to-day Toronto operation ensuring proper culinary standards and techniques are in place for preparation of food items, production, presentation, and service standards
  • Manages a culinary team of chefs and hourly staff to ensure quality in final presentation of food
  • Trains and manages culinary employees for best practice food production techniques
  • Maintain staff records including training, shift opening/closing checklists and performance data
  • Maintain effective client and guest rapport for mutually beneficial business relationships
  • Consistent focus on margin improvement; performance metrics, data, order, and inventory trends
  • Responsible for delivering food and labor targets; controlling inventory, ordering and wastage
  • Ensure efficient execution and delivery of all culinary products in line with the daily menu
  • Maintain integrity of the standard Aramark food offer; always maintaining food quality and safety
  • Ensure compliance with Aramark SAFE food and Quality Assurance standards, occupational and environmental safety policies in all culinary and kitchen operations
  • Comply with all applicable policies, rules and regulations, including but not limited to those relating to safety, health, wage and hour

Qualifications

  • 5+ years culinary experience in progressive roles to Executive Chef
  • Post-secondary culinary education required; Red Seal Certification preferred
  • A minimum of 2-3 years in a management role; multi-unit or location experience is an asset
  • Experience with menu construction, culinary trends, chef training, coaching and development
  • Proven ability to develop menu offerings for day-to-day offerings and executive catered events
  • Demonstrated understanding of food costs and the outcomes and results at each client site
  • Strong business acumen to manage food, labour, inventory, ordering and wastage
  • Experiential knowledge required for management of people and/or problems
  • Requires advanced knowledge of the principles and practices within the food profession
  • Excellent communication, organization, and the ability to manage multi-site operations
  • Willingness to travel routinely and possess a valid Ontario driver’s license
